We brew a mouth-watering variety of beer styles over the course of the year, 10 styles which are available year-round. Of our seasonal beers, we typically brew only one batch of each (except for our bottled seasonals), which remain available while supplies last.

Please note that our bottled beers are unpasteurized, which makes them more susceptible to death by heat. Please keep them refrigerated!

Pale Ale

Helles-Style Summer Lager March 29

A Munich Style Helles. Golden and medium-bodied, it has a fresh noble hop character and lightly toasted malt flavor. This classic summer time lager is made for the warm, lazy days of Summer in America's heartland.

Oktoberfest August 16

A malty, full-bodied, deep reddish-amber lager. Traditionally brewed in March for the Oktoberfest in the fall, this style is also known as Märzen. Also available in bottles.

Coffee Stout November 1

This collaboration with Kaldi's Coffee uses the cold toddy method of extraction for the coffee. We mix it with Oatmeal Stout for an exceptionally delicious beer.

Export IPA March 29

This full-bodied traditional English-style ale is brewed with a high gravity and extra hops, which originally helped to preserve the beer on long voyages from England to India. 8% ABV

Pumpkin Ale September 1

A full-bodied, deep reddish amber beer made with pumpkin and butternut squash and spiced with nutmeg, clove and cinnamon. Celebrate the bounty of harvest with this rich, malty ale and invoke the season of plenty. Also available in bottles. Also available at Bottleworks.

Christmas Ale November 1

A full-bodied amber ale to spice up the holidays. ‘Tis the season to enjoy this rich and flavorful ale made with orange peel, cloves and spicy hops. Also available in bottles.

Grand Cru
Fruity, spicy aromas and flavors contribute to the complexity of this golden-colored Belgian ale. Medium body and effervescence contribute to a light, dry impression, despite its strength and sweet, smooth finish.

Tripel

Hearty with a golden hue and rich, fruity character. While this ale is light in color, it is fuller bodied than many darker ales. These characteristics make it a great after-dinner drink and a perfect complement to aged cheese and fruity desserts.

Quadruple

Schlafly Quadrupel is, as its name implies, a serious beer.  But don’t be intimidated. This fourth beer in our bottle-conditioned Belgian-style beer series has a rich, malty backbone that is generously balanced by select, fresh hops to create a luscious, smooth character.  Sharing it with friends enhances the enjoyment, whether in front of a roaring fire or at the finest dinner party.

Barrel-Aged Imperial Stout (2010 vintage, TBA)

Roasty, rich and malty, our Imperial Stout is aged for several months in freshly-emptied Jim Beam bourbon barrels, where it pick up the essential character of oak, caramel and bourbon flavors.

This is a perfect beer to pair with hearty, cold-weather dishes, smoked meats, foie gras, and virtually any dessert (especially chocolate). Great with long-aged cheese like Gouda, Parmesan or cheddar.

Oak-Aged Barleywine (2010 vintage, TBA)

Schlafly Barleywine is aged on new Missouri oak. The wood has a medium toast, which helps to caramelize the sugars in the oak and adds a nutty character to the beer as it soaks into the wood.

This beer pairs great with grilled meats and game, roasted vegetables, or any fried food. Best with strong cheese like Stilton or rich, sweet desserts like a chocolate hazelnut torte or toffee caramel cheesecake.

Vienna
Amber in color and medium in body, this malty lager is a mild version of the Oktoberfest style.

This full-bodied, dry stout has the bitterness of roasted barley with flaked barley added for a smooth finish.

English IPA

C-1: Oak-Aged Smoked Rye Pale Ale
The first beer we have brewed in collaboration with O’Fallon and New Albanian. We used cherry-wood smoked malt and rye in the brew, aged it on oak, and then dry hopped it with lots of big American aroma hops. Enjoy it while you can…it will be gone fast!
