From our flagship Pale Ale to our seasonal Barleywine, every batch we brew is full-flavored and of uncompromising quality. If it weren't, our name wouldn't be on the package.
We brew a mouth-watering variety of beer styles over the course of the year, 10 styles which are available year-round. Of our seasonal beers, we typically brew only one batch of each (except for our bottled seasonals), which remain available while supplies last.
Please note that our bottled beers are unpasteurized, which makes them more susceptible to death by heat. Please keep them refrigerated!

Bière de Garde
|
A bottle-conditioned, French farmhouse-style ale. The name refers to the beer's ability to improve with age and if you choose to age this ale, the tart fruitiness from the yeast and the sweet maltiness from the grains will meld together nicely for several years at cellar temperatures. Grand Cru

Tripel

Schlafly Quadrupel is, as its name implies, a serious beer. But dont be intimidated. This fourth beer in our bottle-conditioned Belgian-style beer series has a rich, malty backbone that is generously balanced by select, fresh hops to create a luscious, smooth character. Sharing it with friends enhances the enjoyment, whether in front of a roaring fire or at the finest dinner party.

Barrel-Aged Imperial Stout

Roasty, rich and malty, our Imperial Stout is aged for several months in freshly-emptied Jim Beam bourbon barrels, where it pick up the essential character of oak, caramel and bourbon flavors.
This is a perfect beer to pair with hearty, cold-weather dishes, smoked meats, foie gras, and virtually any dessert (especially chocolate). Great with long-aged cheese like Gouda, Parmesan or cheddar.

Oak-Aged Barleywine

Schlafly Barleywine is aged on new Missouri oak. The wood has a medium toast, which helps to caramelize the sugars in the oak and adds a nutty character to the beer as it soaks into the wood.
This beer pairs great with grilled meats and game, roasted vegetables, or any fried food. Best with strong cheese like Stilton or rich, sweet desserts like a chocolate hazelnut torte or toffee caramel cheesecake.

C-1: Oak-Aged Smoked Rye Pale Ale
The first beer we have brewed in collaboration with OFallon and New Albanian. We used cherry-wood smoked malt and rye in the brew, aged it on oak, and then dry hopped it with lots of big American aroma hops. Enjoy it while you can
